DAIQUIRI
(Three Recipes)

HAVANA'S FAVORITE DRINK IS THE  DAIQUIRI

Named after an obscure Cuban river, the drink of the West Indies is a rum concoction called the Daiquiri.  As in all cocktails, the flavor and the potency depends upon the individual who wields the shaker.  Few can deny that Victoriano Sainz, chief mixologist at the Starlight Terrace of the Hotel Nacional, serves the best daiquiri in Havana.  His recipe is printed here.

CABARET PRESENTS THE STARLIGHT DAIQUIRI

Start with the juice of 1/4 Cuban lemon
Add one teaspoon of sugar syrup
One drop of maraschino
1 ½ ounces of white rum
Shaved ice.

Mix in an electric mixer and serve in an iced champagne glass.



LA FLORIDITA RECIPE

2 ounces of rum
1 tablespoon of sugar
1 teaspoon grapefruit juice
1 teaspoon maraschino
juice of 1/2 a lemon
pulverize ice
blend and serve cold



TRADITIONAL RECIPE

2 ounces of rum
1 teaspoon of sugar
1 teaspoon maraschino
juice of 1/2 a lemon
pulverize ice in an electric blender
serve as a frappe
